Fajitas
Ingredients:
- Vegetable oil
- 1-2 yellow onions, coarsely chopped
- 2 bell peppers, coarsely chopped
- Several tomatilloes and/or roma tomatoes, coarsely chopped
- Fajita seasoning
- 1 can of black beans or refried beans or other beans of your choice
- 1-2 cups frozen corn
- Cheddar cheese or other cheese of your choice
- Rice
- Tortillas
- Salsa
Directions:
- Put on rice
- Put about 2 Tbsp. of vegetable oil in a large frying pan and heat
- Once frying pan is warm, add onion, bell peppers, tomatilloes and/or tomatoes, and fajita seasoning. Cover and sauté until soft.
- While onions and peppers are cooking, warm up beans and frozen corn, and shred cheese
- Warm tortillas
- Serve with salsa
