Hedden Family Recipes

Pancakes

Ingredients:

  • 1⅔ cups milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • ¾ teaspoon salt
  • 2½ teaspoons baking powder
  • 1 banana (optional)
  • chocolate chips or blueberries (optional)

Directions:

  1. In a mixer, beat together eggs, milk, and vanilla. Add flour, salt, and baking powder. Mush up banana (optional) and add to mixture. Mix until batter is uniform.
  2. Spoon out desired amount onto preheated frying pan. If desired, sprinkle chocolate chips or berries on surface of pancakes and gently push them down into the pancake. If necessary put a little more batter on top of chocolate chips or berries. (This is important because if they stay on the surface they will be overcooked when the pancake is flipped.) When bottom is golden brown, flip pancakes to cook other side. If pancakes are unusually thick, make sure that they are thoroughly cooked in side before serving.
  3. Serve with desired toppings: honey, maple syrup, yoghurt, berries.
