Smoked paprika home fried potatoes

Sweet potatoes can be substituted for potatoes.

Ingredients:

  • 2 Tablespoons olive oil
  • 2 Tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ medium yellow onion, peeled and coarsely chopped
  • 1 pound potatoes, peeled and cut into ½-inch cubes

Directions:

  1. Preheat oven to 450 degrees.
  2. In a large bowl, add olive oil, smoked paprika, garlic powder and sea salt, and mix thoroughly.
  3. Add onion and potatoes to bowl and stir to cover them with the seasoned oil.
  4. Spread potatoes in a single layer on a cooking sheet. Place in the oven and roast for 35 to 40 minutes, flipping potatoes halfway through, until they are golden and tender.

Hint: some of the seasoned oil mixture will remain in the bowl after the potatoes are removed and put in the oven. Once the potatoes are cooked, they can be put back in the same bowl so that they pick up the rest of the seasoned oil mixture. Alternatively, other parts of the meal can be prepared in the same bowl so that they will pick up the seasoned oil mixture.
